Report Summary

Malt flour is made by germinated cereal grains that have been dried in a process known as "malting". The grains are allowed to germinate by soaking in water, and are then dried with hot air to stop further germinating. At the same time dextrins, glucose, proteins, and salts derived from the cereal, it is rich in diastase and is added to wheat flour of low diastatic activity for bread making; used as an ingredient of ‘malt’ loaf. Due to malting process it has increased enzyme activity. More precisely, it contains alpha amylase, which helps to break down complex sugars and starch in the dough to simple sugars such as maltose, making them easier for yeast to feed on. The key ingredients of malt flour are barly, wheat and rye.  


On the basis of product type malt flour market is segmented into diastatic and non-diastatic. Diastatic flour contains active enzymes in it. It is used for baking. Whereas non-diastatic does not contain active enzymes in it. It used as a flavour in a various types of applications and in baked goods, to give a glossy surface and a soft, fine crumb. It is also referred as Malt Powder. Major factors resulting in rise in demand of malt flour are rise in health concerns for high-protein flour provides an impetus for flour millers to produce gluten-free flour alternatives. Change in taste and preference of consumers as well as dietary concerns for manufacturers to develop differentiated products have impacted the overall sales.  


Malt flour finds applications in bagel, bread, bread mixes, bread sticks, buns, cake, cake mixes, cookies, crepes, crisp bread, croissant, muffins, pancakes, pizza base, pretzels, rolls, savoury biscuits, savoury crackers, scones, specialty breads (i.e. ciabatta), sweet biscuits, sweet crackers, sweet pastries and waffles.
